Ahh Gingerbread. The sweet and spicy smell of these baking just feels like Christmas. And if you love gingerbread I know you will love my latest recipe Simple and Easy Low Sugar Gingerbread Cookies.

Gingerbread has been the topic of much conversation in the Goodie household. It all started a few weeks ago after Mr 7 acted the Gingerbread Man story out in class. He then coerced us into acting this out at home, much to the twin’s delight, my sheepish participation (in my defence I was a great cow) and to Mr Goodie’s refusal to participate.

The twins are also very interested in all things Gingerbread too. They have been reading folk tales at daycare and one of the books they read was the Gingerbread Man. As a follow up activity they made gingerbread at daycare. Side note: I just LOVE how they do baking at daycare! And because it’s the season for Christmas cookies we are baking these Simple and Easy Low Sugar Gingerbread Cookies at home too.

A quick google search will show there are literally hundreds of recipes for Gingerbread. So why should you make these ones? Well, for one thing these Simple and Easy Low Sugar Gingerbread Cookies are lower in sugar than traditional recipes.

They only contain 1/3 cup of brown sugar in total which is just over 1 gram per serve. But don’t let the low sugar fool you into low flavour they are still sweet enough and have that flavourful trademark spicy festive taste.

These Simple and Easy Low Sugar Gingerbread Cookies can also be frozen too. After baking, cool the cookies on a wire baking rack and then store in the freezer. These gingerbread cookies are perfect to bake now and freeze for Christmas parties or gifting later in the month.

Another reason you should make my gingerbread is the recipe is that they are really easy! These Simple and Easy Low Sugar Gingerbread Cookies are a one bowl, 7 ingredient recipe that comes together relatively quickly (except the chill time). Which is what you want when you have little helpers.

Do you bake with your kids? It’s something that we enjoy to do, and a bit of planning and preparation makes the process so much more enjoyable and much less…yell-y. So my biggest tip for baking with kids is to get everything you need out and ready and then invite your kids to join you to bake. And they will love baking (and eating) these.

Description

These Simple and Easy Low Sugar Gingerbread Cookies are great to bake with kids. Just over 1 gram of sugar per serve but retaining their sweet and spicy festive taste you will love this healthier version of the traditional favourite.

Ingredients

Scale

  1. 100g butter softened
  2. 1/3 cup brown sugar
  3. 2 tsp ground ginger
  4. 1/2 tsp allspice
  5. 1 egg
  6. 2 cups flour
  7. 1 tsp baking powder

Instructions

  1. In a large bowl cream together the butter and sugar with an electric beater
  2. Add the spices and the egg and mix again to combine
  3. With a spatula or spoon mix in the flour and baking powder to form a dough
  4. Bring the dough together and wrap in cling film and refrigerate for 20-30 minutes
  5. Meanwhile, preheat your oven to 180c and line a baking tray with baking paper
  6. After chilling, roll the dough out on baking paper sprinkled lightly with flour and cut out the gingerbread shapes
  7. In batches, place the gingerbread on to the prepared tray and bake each batch for around 8 minutes or until lightly golden
  8. Cool on a wire baking rack before enjoying or freezing for later.

Notes

If you don’t like an overly gingery Gingerbread only add 1 1/2 tsp of ginger.

This batch makes 100 mini gingerbread or around 3 dozen medium gingerbread men. The nutritional information is based on the mini cookie serving size. The medium gingerbread men have 3% of the average daily sugar requirement per cookie.

These cookies can be frozen for around 3 months. Store in a ziplock bag after baking when they have cooled completely.

      I am not sure that they will be easy to roll using the Nuttelex but it could work. Maybe coconut oil might be better though? Happy baking and would love to know how you get on. Bernadette x

    great biscuit recipe I added a small splash of maple syrup to the mix and the result was delicious. In Australia we have a lo GI brown sugar with less carb content so felt I could add a tablespoon of maple syrup for added festive flavour. Worked a treat. Thanks for the recipe!

    The kids (aged 2 and 4) really enjoyed making these cookies this morning, such a simple recipe thanks and it rolled out well. It made 2 trays of medium cookies, about 18. The kiddies are happily eating them but I found them very bland. I will add more allspice next time and maybe orange zest as someone suggested. Thanks for a low sugar recipe!

    These were perfect — exactly what I was looking for. I had been using another low sugar gingerbread recipe, but I had to make so many modifications, it was a pain to make. With these, the only modification I made was adding the zest and juice of an orange because my other recipe had it and I loved that about them. (And I used a pinch of cloves instead of all spice because I didn’t have any and added a pinch of salt, because that’s how my Granny taught me.) I’m thinking of a lot of variations I can make with these: vanilla, cinnamon, lemon…

        I have never tried but they don’t spread very much given the low butter content so I would suggest you’d need a cookie cutter. Bernadette x

    Not sure what I did wronged but didn’t make nearly as much as recipe says it should. Made about 12 cookies with normal cutters. Looks and smells yum though.

      It probably is just dependant on the size of the cutters really 🙂 the mini size ones I have a truly mini and the medium cutters I use are only around 7cm high and wide. Thanks for baking Bernadette x

    I love that there is a low amount of sugar in these cookies, I tend to find gingerbread way too sweet so this recipe seems perfect! And a great idea of activity to do with kids 🙂

A little reminder just in case you, like me, have kids who don’t eat all their lunch every day.There are so many reasons why lunch may come home partially eaten or uneaten. But just because lunch has come home does that mean it wasn’t a success? NO WAY!Lunchbox success to me is NOT my kids eating everything laid out before them. Sure it’s great when they do, but if they don’t then it’s not a reflection on me.I define success by what I offer. Success to me is OFFERING my children nutritious delicious food, a mix of food that is loved, liked and that they’re learning and for them to choose to eat or to choose not to eat.If you do have school lunches coming home here’s some tips:1️⃣offer the lunchbox again for afternoon snack2️⃣reuse leftovers in salads or with dinner3️⃣if large amounts are coming home regularly check that the size of the lunchbox is suitable, it could just be a lot of food4️⃣send a mix of food you know your kid eats with a new food, not all new foods at once so you know it’s not the food you’re sending but possibly the environment of school (they don’t have long to eat and it can be pretty overwhelming)5️⃣because play can be prioritised over food send food, that’s easy to eat (ie cut up into smaller portions) and that fills tummies up - think protein, fibre and fatsDo your kids finish their school lunches?Bernadette x

Is your face more often like this 😩when you realise you need to pack school lunches? Or is it like this 🤩?I’m generally 95% 🤩 5%😫 and I have a few tips and tricks to keep energised and excited about packing varied school lunches!Tip 1️⃣ meal plan your school lunches like you would your dinners. If you do not meal plan already, you NEED to. It saves you time and money. I find it easy to plan out my meals and lunchboxes for the week and at the same time I write out my grocery list.Tip 2️⃣ Bake in bulk and stash in the freezer. What I tend to do is bake multiple batches of baking in one day and freeze my goodies in reusable ziplock bags or containers to use throughout the term. SIMPLE and really not much more effort than baking one batch. Frozen baked goods normally last 2-3 months so you can bake and freeze enough to last you the whole term.Tip 3️⃣ if you’re really looking to step up your prep to the next level you can also freeze pre-made sandwiches, bread rolls and croissants and have this ready to pull out as needed. But just a note. Not all fillings freeze equally. Don’t go freezing lettuce you will end up with slimy green gunk. But chicken, ham and cheese tend to freeze well.Tip 4️⃣ prep foods ahead of time to pull out quickly for school lunches. For example carrot and celery sticks, poached or roasted chicken, salads, hard boiled eggs or even double your dinner recipe to send leftovers the next day.Tip 5️⃣ embrace night packing. This works for me as I’m less rushed. And I truly always regret it when I don’t! And if you the room and enough lunchboxes you can even step this up a level by packing for two days of lunches. I find if you’re using food quality lunchboxes they’ll stay fresh.What are your tips for school lunch packing?
