Let me explain…

No, I’m not talking about some crazy new method of dicing and slicing vegetables. I’m talking about microgreens – tiny edible immature seeds that are incredibly nutritious and truly beautiful to look at, thus getting the name vegetable confetti.

The beauty of microgreens is that they pack so much nutrients in the tiniest packages. For example, red cabbage microgreens have 6 times the amount of Vitamin C and 69 times the amount of Vitamin K that mature red cabbage has. Pretty impressive, right?

Now, before you get too excited, microgreens do come with one big downside.

They are extremely expensive, clocking in as much as $30 per pound!

Before you write them off for good, I might have a solution to get your excitement right back on. Microgreens are probably the easiest thing you can grow at home!

As long as you have a windowsill, some sun coming in through your window, some potting mix, a few containers, and your desired seeds, you can grow pretty easily. And the best part – the will be ready for consumption in about 7 to 14 days. So, no waiting around for months and months before you even see anything.

They do require consistent daily sunlight, but even if you live in a northern climate where the sun is pretty much nonexistent for months at a time, you can still enjoy microgreens with an indoor grow light.

And if you really don’t feel confident experimenting with the whole process on your own, you can always try a microgreens kit.
